Japanese Snow Crab Salad… Easy, Cheap, Tasty

We all love that wonderful “snow crab” salad that stuffs many sushi rolls or is served as beautiful appetizer. In this world there are many addicitve things, and this salad is definitly one of them. Each time a bowl of the heavenly salad  is placed in front of our table, a fight always breaks out. The sweetest people become hungry savages and forget all basic manners and lose their dignity in there immediate jump towards this simple dish once placed on the table.

Finally Mr. Fed Up decided to make this stuff at home to save money, and more importantly, to  show off his cooking skills when friends are over.

The normal recipe used by expert Japanese sushi chefs  at high end restaurants and by that guy who manages the prepared food section of a typical grocery store is pretty much the same. Take surimi, that fake snow crab made from fish paste, and dice it finely. Then mix with some Japanese mayo (typically a brand called Kewpie).

But you can make it yourself without having to search for this Japanse mayo, and make it taste even better. And potentially even healthier.

Mr. Fed Up makes Japanese "crab" salad

Get some of that fake crab…found EVERYWHERE…I bet you are going to start seeing it next to the day old dougnuts and vacuum packed pickles commonly scattered around convience store check out counters. Dice the “crab” and add regualr mayo…just the bare minimum needed to get a mushy past formed. It can be fat free mayo, to make healther, as it really wont make a big difference. Than to flavor it so you have something similiar to what you get at sushi spots: add just a little rice vinigar, and just a very quick shake of ground mustard. Add a little sweetener (splenda is fine if you are going the freaking healthy route). Mix it all togather and keep in the fridge until right before serving. Top wth some green onions if you really want to be one of the asses who has to go over-the-top and be a showoff.

Its good. Damn good.
